Conchas are a classic Mexican pan dulce, and ours is made uniquely with masa madre (sourdough), whole grain, eggs, butter, and organic cacao. The texture is like a harmony of sourdough and brioche. Each semi-sweet soft bun is capped with a crunchy chocolate topping that feels like you’re eating bread hugged by a sugar cookie crust.  

Made with Organic Bread Flour, Organic All Purpose Flour, Filtered Water, Organic Cane Sugar, Organic Whole Wheat Flour, Farmers Market Eggs, Organic Whole Milk, Butter, Organic Powdered Sugar, Organic Cacao Powder, Sea Salt, Sourdough Starter.

This item is made with masa madre which means it is naturally leavened and fermented with sourdough.  Think of sourdough/masa madre as a method of cultivating wild yeasts for baking rather than just bread with a tangy/sour flavor.  We strive to make balanced tasting breads and pastries because we believe in the wisdom and ancient tradition of baking with natural leaven and it provides a chance to taste the nuances of the beautiful grains and ingredients we’ve selected.
