Nixtamal Queen (Set of 4)

A multi-layered pastry with a deeply caramelized sugar crust and soft gooey interior. This listing is for a set of 4 queens to share.

It chews like bread and tastes like fresh corn tortillas. We blend masa madre (sourdough) with our house-made heirloom corn masa (known as nixtamal). This dough is then layered with butter a dozen times over, rubbed with cane sugar, shaped into a flower and baked to achieve a shiny golden shell, creating satisfying textures and accentuating the flavors of the ingredients at play.

The name is a play on a well known pastry (kouign-amann, pronounced KWEEN uh·MAHN) that inspired the development of this traditional yet innovative version.

This item is made with masa madre which means it is naturally leavened and fermented with sourdough.  Think of sourdough/masa madre as a method of cultivating wild yeasts for baking rather than just bread with a tangy/sour flavor.  We strive to make balanced tasting breads and pastries because we believe in the wisdom and ancient tradition of baking with natural leaven and it provides a chance to taste the nuances of the beautiful grains and ingredients we’ve selected.
